About Chukasoba Katsumoto
The owner of Chukasoba Katsumoto, Yasushi Matsumura, worked as a French chef at a hotel in Kyoto for 36 years. During that time, he decided to pursue ramen with the desire to make delicious food more easily accessible to people. First of all, he wanted to be recognized in Tokyo for his classic dried sardine-based Chinese noodles. With that in mind, in 2018, he opened his first store in Suidobashi, Tokyo, and the origin of his ramen life was Chukasoba Katsumoto. The signature dish, “Dried sardine soy sauce Chinese noodles,” is a nostalgic yet delicate bowl of noodles that combines the flavor and rich aroma of carefully selected ingredients such as dried sardines and chicken with medium-thin, springy noodles from the long-established noodle factory, Asakusa Kaikaro. Other sister stores include “Tsukesoba Kanda Katsumoto,” a tsukemen specialty restaurant, and “Ginza Hachigou,” a Chinese noodle shop characterized by its golden soup made using French techniques without the use of “kaeshi,” and in February 2024, the long-awaited second branch of “Chukasoba Katsumoto,” “Chukasoba Toyosu Katsumoto,” opened within the Toyosu Senkakumanrai facility.
