This is the only tsukemen specialty restaurant in the group, run by owner Yasushi Matsumura, known for Ginza Hachigo. Owner Matsumura has experience as the executive chef of ANA Crowne Plaza Kyoto, and has been perfecting the way of French cuisine for 36 years. “I want more people to enjoy delicious food more easily.” With that in mind, he jumped into the world of ramen, and opened “Chukasoba Katsumoto” with the desire to compete with orthodox dried sardine soy sauce in order to be recognized in Tokyo. After that, he improved this dried sardine soy sauce into tsukemen and opened “Tsukesoba Kanda Katsumoto” as a specialty store. You can enjoy the soup that allows you to fully enjoy the aroma and flavor of mellow soy sauce and dried sardines, and the style of tsukemen that you can enjoy by mixing two types of noodles, thin and flat noodles, specially made by Asakusa Kaikaro, in a Japanese restaurant-like space.
In addition, the sister restaurant “Ginza Hachigou” was also selected as one of Tabelog’s 100 Best Ramen Restaurants in Tokyo 2024.
